Dessert: Brown Bears.
Take the dough of a regular dinner roll, from a tube, and wrap the dough around a stick. Roll the dough in cinnamon and sugar. Roast over the fire until golden brown. Then pull off the stick and enjoy. You can also first put a marshmallow on the stick and wrap the dough around that. It sounds gross, but it's so good!
Dinner:
Really I don't have any crazy suggestions, but try and be creative. I love using pie irons to make pizzas or sandwiches. A regular PB&J in a pie iron is awesome! Also think about what you like to cook at home. We did versions of Hamburger Helper, all you have to do is brown the meat. Traveling Tacos are great for a big group. Brown meat, add taco seasoning. Then have open bags of Fritos and put the meat in. Campers can add lettuce, tomato, cheese, etc. We've also done breakfast for dinner. It's really easy to make scrambled eggs or even french toast over the fire. Think about the types of foods you liked to eat as a kid, and go from there!

Fajitas are easy to do on a cook out and foil packets (meat, potatoes and veggies cut up small, placed in greased foil packets and cooked in the cools of a fire). Burgers. Hot dogs.
deserts - chocolate fondue and fruit (melted chocolate with the addition of some milk or cream), rainbow pudding - vanilla pudding with M&Ms (minus the brown ones)stirred throught them. Road Kill - line a dutch oven with foil (makes it easier to clean) then empty 2 cans of cherry pie filling and top with chocolate cake mix (dont make it up the juice from the pie filling will do that!) and cook until it smells/looks cooked - about 45 mins - you can also do a peach cobbler type thing with peach pie filling and white cake mix. Baked Apples - core and fill with sugar and raisins etc, wrap in foil and cook in the embers.

I enjoy a good foil dinner too (see above: foil packet) but instead of buttering the foil we put in cream of ... soup (we use mushroom but I get celery since we don't have chicken and I don't like mushrooms) or if the kid doesn't like either soup option, some water. This is a great meal because everyone can put what they want on their own! I work with 7 year olds and they are quite specific in their likes and dislikes and how they will eat things.
We also do pie-iron pizzas which are also individualized (and can even be pie-iron grilled cheese if you just omit everything but the cheese).
Hot subs are also easy and individualized and are exactly as they sound- hoagie roll, sub stuff (cheese, meat, veggies, etc), butter, foil. Just a tip: put the veggies on after you heat the rest of it.
Like someone else suggested, have them think of their favorite foods and there is likely a way to do at least a simpler version of it on a cookout.
desserts- hmm, I usually end up with banana boats and s'mores as my 2 for our 2 cookouts each week since the kids always want them. However, I also enjoy them. I had to ask my CIT director for an idea when my kids and I did 3 cookouts. She suggested Peaches delight. I believe this involves peach halves (or whole if you can/want) brown sugar, and maybe some butter. My camp notebook with all of these things is at home so I'm not completely sure. Wrap in foil and put near coals, I believe.
My kids did nachos one time. This was almost a stretch because of the lack of needing to cook things, but we found some stuff. I believe we heated some beans, and maybe browned some meat.

We did a whole day of outdoor cooking in precamp where we learned to make several things for each meal. Pie irons for sandwiches was really good. We also made great mini pizzas in a box oven.
My favorite dessert was dump cake. In a dutch oven lined with foil, you dump in pineapple tidbits and cherry pie filling (or probably other sweet fruits/pie fillings). Then you top it with a cake mix and butter on top. It was /so/ amazing, even if we joked about the name.

hmm my favorite week at camp was pioneer week wehre we camped out the whole week ad kids cooked all the food on fire so I have tons of cookout food. Two more intresting deserts we had were orange sponges - you cut the top orange off scoop out all the middle and eat it you then fill it with sponge mixture out lid back on wrap in foil ut in fire end up with a orange sponge cake indie orange sooo good can also add choc chips into.
Other was home made ice cream had two coffee tins one smaller - you put smaler one iside and filled with cream then the space in between fill with ice put the lids on and get the kids to roll it around abck and forth or while eventually you will get ice cream in the inside tub.

Last night we made "pizza enchiladas" in the dutch oven. Pretty much amazing. It's made with torn up flour tortillas, and pizza toppings, layered in a dutch oven and cooked until it's all melty and delicious. For desert we made peach cobbler in the dutch oven - peach pie filling, two dry yellow cake mixes, and a ton of butter on top. The liquid from the pie filling soaks up through the cake mix and the butter melts down through and it becomes a bubbly delicious mess.
