We are in the process for developing a risk management plan for our camp. Does anyone have any examples of plans for food-borne illness striking during camp?

While not specific about plans to handle when food borne illnesses strike, this does provide some useful information about the various illnesses, symptoms, causes, etc.

The ServSafe program is a GREAT education tool for this. I'd just buy a ServSafe textbook (I know that I got mine used for about $20). It's worth it just to read all about the foodborne illnesses. The book talks about the sources, symptoms, people at risk, ways to keep them at bay, etc. Also, you can get it at http://www.servsafe.com

I hope that helped :). I wish that I could just spat some information off to you, but I am not near my textbook. If you would like to see a helpful PowerPoint on foodborne illnesses, let me know and I'll send it over.
