Just wondering as to the minimum age or restrictions on kitchen staff under the age of 18.

I know he won't be allowed to operate the slicer or high-temp dishwasher, will he be allowed to use the ovens or knives?

I know I've been working in restaurants using knives, ovens(and quite frankly everything else, regardless of legality) since I was 14, but I wasn't sure if ACA requirements differ from NYS health department regulations.

BTW, I'm in NY.
